Chilal cheese has a very high salt content. It must be desalted before consumption.
Traditionally, in the Middle East, cheese (chilal, msanara, fils d'or, etc.) is prepared at home in spring in very large quantities and is stored in brine in jars of very salty water for optimal conservation throughout the year.
Cut the cheese knot in four, dip the pieces in a bowl of lukewarm water. Once slightly softened, undo the threads of the cheese knot and leave in the soaking water for about ten minutes.
Drain when the desired degree of salt is reached. Taste.
