Dosage: one measure of fresh yeast is equivalent to three measures of dry yeast; for example 20g of fresh yeast is equivalent to 7g of dry yeast for 500g of flour.
After opening, Saf-levain yeast (well closed) can be stored for 6 months in a cool, dry place.
