Preparation of basmati rice
- measure out a volume of rice
- strain
- soak in a container of warm water for about 10 minutes, then drain.
- boil in a heavy-bottomed saucepan 1 volume and 3/4 of water
- salt, add a knob of clarified butter (ghee, smen)
- pour the rice into the boiling water
- mix gently with a fork
- lower the heat after resumption of boiling, cover the saucepan
- check the complete absorption of the water with a fork
- garnish with a knob of clarified butter, mix very gently with a fork.
- cover, let stand at least 5 min
- serve
NB: Rice is eaten immediately, it does not generally withstand reheating.
